Bean Slaw Salad

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 can chickpeas, drained
  • 1/2 red onion, diced
  • 1/2 jalapeño pepper, diced (optional)
  • 1/2 red bell pepper, julienne
  • 1 avocado, diced
  • 1/2 cup cilantro leaves, chopped
  • 1 bag coleslaw mix
  • 2 cups tortilla strips
  • 1 cup Gayo Azul Gouda, cubed

Dressing

  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper

Instructions

  1. In a large mixing bowl, combine the black beans, red kidney beans, chickpeas, red onion, jalapeño pepper, red bell pepper,

avocado, coleslaw mix, and cilantro.

  1. In a separate mixing bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
  2. Add the dressing to the bean mixture and toss lightly.
  3. Refrigerate for a couple of hours to let the flavors meld together.
  4. Meanwhile, cube the Gayo Azul Gouda and set aside.
  5. Top with gouda and tortilla strips before serving, Enjoy.
