Heat a large skillet over medium heat, adding 1 TBSP of olive oil.
Once the skillet is hot, add ground beef and break it apart with a wooden spoon as it cooks. Continue to stir and cook beef until it starts to brown. Season with your favorite taco seasoning or simply use salt and pepper.
While beef is cooking, warm and toast the tortillas by using a stovetop grill pan or on an outdoor grill.
Once the beef is fully cooked, layer the warm tortillas with cooked beef, pico de gallo, diced jalapeños and crumbled Gayo Azul® Cotija cheese. Garnish with chopped cilantro and fresh squeezed lime juice to taste.
