Elote with Avocado Spread

Ingredients

  • 6 ears of corn
  • 2 ripe avocados
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 package Gayo Azul Cotija Cheese, crumbled
  • 2 tablespoons chopped cilantro plus 2 extra tablespoons to garnish
  • 1 clove garlic, minced
  • 1 lime, cut into wedges
  • Chili powder

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the corn on the grill and cook for 10-12 minutes, rotating every few minutes, until the corn is charred in spots on all sides.
  3. While the corn is cooking, In a mixing bowl, peel and mash avocados.
  4. Add mayonnaise, sour cream, 1/2 cup Gayo Azul Cotija Cheese, and cilantro; add to the mashed avocado.
  5. With a hand mixer, beat on medium until well blended and set aside.
  6. Once the corn is done, remove it from the grill and let it cool for a few minutes.
  7. Slather each ear of corn with the avocado mixture, making sure to cover all sides of the corn.
  8. Squeeze fresh lime juice over the corn, and sprinkle with chili powder.
  9. Coat each ear with the remainder of Gayo Azul Cotija Cheese. Sprinkle with Cilantro.
  10. Serve immediately and enjoy.
