Queso Pulled Pork Tostones

Ingredients

  • 1 pound pork shoulder
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • -
  • 4 ripe Plantains
  • Salt
  • Cooking oil
  • -
  • 1 package of Gayo Azul Queso Blanco

Salsa Ingredients

  • 1 ripe mango, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon honey
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

Pulled Pork

  1. Preheat oven to 275 degrees.
  2. Season the pork with salt, garlic powder, onion powder, paprika, cumin, chili powder, and black pepper.
  3. Heat the oil in a skillet over high heat. Sear the pork for about 5 minutes on each side until browned,
  4. Wrap pork loosely in foil, place in a baking pan and bake for 4-5 hours, or until pork falls apart.
  5. Remove from the oven and let it cool. Shred the pork with a fork removing any fat pieces and discard.

Tostones

  1. Peel the plantains
  2. Cut the plantains into 1 ½ inch thick slices.
  3. Heat 1-2 inches of cooking oil in a large frying pan over medium-high heat
  4. Using the bottom of a glass, gently flatten each plantain piece until flattened out about 1/4 inch thick.
  5. Add the plantain slices to the hot oil, and fry for 2-3 minutes on each side until golden brown.
  6. Remove plantains and place them on paper towels to drain.

Salsa

  1. Combine the diced mangoes, red onion, red bell pepper, jalapeno pepper, and cilantro in a mixing bowl.
  2. In a small mixing bowl, whisk together the lime juice, honey, and ground cumin. Season with salt & pepper if needed.
  3. Toss dressing over the mango mixture and toss well, set a side.
  4. Cut the Gayo Azul Queso Blanco into cubes.
  5. Heat a non-stick pan to medium-high and sear the Gayo Azul Queso Blanco on both sides for about 1 minute on each side or until golden brown.

Assemble the tostones,

  1. Place a spoonful of the pulled pork on each tostone. Add a cube of Gayo Azul Queso Blanco.

and top with the mango salsa.

15 Serve the tostones as an appetizer or a main course.
